Raise your hand if you only eat trail mix for the chocolate. Oh, wait…is that ALL of you raising your hands? Yeah, that’s what I thought. I mean, if I want nuts, I’ll buy some nuts. If I want nuts with my chocolate, I buy trail mix with chocolate chips or M&Ms in it because why else would I be eating trail mix? That is why we are so excited to share this fun recipe today for Dark Chocolate Trail Mix Bark. This stuff takes all of the best parts of trail mix, while emphasizing the VERY best part of trail mix, the chooooocolate.

This bark is packed with the amazing flavors, textures and crunch of toasted coconut flakes, lots of nuts and seeds, and dried fruit. And it’s all laying on a bed of dark chocolate, which, incidentally, is what I would like my bed to be made of. There is so much to love about this bark. First, it is so simple to make and requires just a few ingredients. Next, it only takes a little piece to stave off sugar cravings while feeling like you’ve had the most indulgent treat. The rich, dark chocolate pairs so well with the crunch of coconut, almonds, seeds, and other nuts, and I love the added sweetness of the dried cranberries. Plus, sprinkling a little sea salt will make your taste buds so happy they’ll forget that fudge season ever happened. Here’s how you make it:

Isn’t it so pretty? I love the colors of the seeds, nuts, and coconut against the dark chocolate. This is a perfect treat to put in a lunch box or take to a party. It is so versatile and delicious with a little less guilt (and a lot less mixing bowls and mess) than a cupcake. My kids are so happy when I give them a little piece, and it’s so delicious they don’t even notice that there is some healthy stuff packed in there.
