Have you heard the trend floating around the internets that 2017 is the year of Hygge? This idea has become a buzzword for bloggers and on Christmas Eve The New York Times even put out an article allll about it. They said that Hygge (pronounced HOO-gah, like a football cheer in a Scandinavian accent) is the Danish word for cozy. It is also a national obsession expressed in the constant pursuit of homespun pleasures involving candlelight, fires, fuzzy knitted socks, tea, cake and other people. Don’t you love this concept? Me too. And this obsession with coziness is now spreading to the states as a way to get through the loooong, cold winter. I mean, I couldn’t agree more with the Danes that getting super cozy is the best way to combat the blues that inevitably come in the depths of winter.
So, today I am sharing a sure-fire, delightful cookie recipe to bring some Hygge into your life: Lemon Curd Linzer Sandwich Cookies! So buttery and sweet with the most wonderful lemon flavor. You’re going to be in a cozy coma.
Here’s how you make them:
Ingredients
- 1 cup butter, softened
- 1/2 cup powdered sugar + extra for topping cookies
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 3 tbsp lemon curd
Instructions
- Combine butter, 1/2 cup powdered sugar, vanilla extract and salt in bowl; beat at medium speed until creamy. Add flour; beat at low speed until well mixed.
- Divide dough in half. Shape each half into a ball; flatten slightly. Wrap each in plastic food wrap; refrigerate at least 1 hour until firm.
- Heat oven to 350°F.
- Roll out dough on lightly floured surface, one-half at a time (keeping remaining dough refrigerated), to 1/4-inch thickness. Cut with 2-inch cookie cutters. Cut out center from half of cookies using smaller decorative cookie cutter.
- Place cookies, 1 inch apart, onto ungreased cookie sheets. Bake 7-9 minutes or until edges are lightly browned.
- Cool 1 minute on cookie sheets; remove to cooling rack. Cool completely.
- Place cooled cookies with center cut-out onto waxed paper; sprinkle with powdered sugar.
- Spread bottom-side of cookies without cut-out with 1/4 teaspoon lemon curd. Top with center cut-out cookie, powdered sugar-side up.
Aren’t these cookies just the prettiest? The sweet, buttery flavor brings all of the feelings of baking with grandma that you need to get your Hygge on.
I mean, is there anything better than a little tea time with a mug of hot Bigelow Tea and some pretty cookies? I love this so much. In fact, I think I’m going to change my last name to Hygge now. It just makes so much sense.
How are you staying cozy this winter? Tell me all your secrets!
Happy baking!

These are seriously almost too gorgeous to eat. But, that wouldn’t stop me! I love anything lemon flavor and totally agree that these pair well with Chamomile. And if 2017 is the year of Hygge, I am more than on board! #client
