I must admit that I am a bit of a dinnertime grouch. When it gets to be around 4 pm and I have to start the cycle of what’s-in-the-fridge-what-can-I-make-with-that-will-they-or-won’t-they-eat-it-how-many-times-a-week-is-acceptable-to-order-a-pizza I want to pull my hair out. Although I love to eat, I have never been one who finds joy in the process of making the food, the eating. Alllll the eating. However, since it is spring and summer is coming soon and there are so much more wonderful fresh produce to be found I am trying to turn over a new leaf, and create meals that are delicious and simple, and don’t turn me into a dinnertime monster. So, in case you are like me and are trying to avoid the dinnertime funk, I thought I would share one of the meals we tried recently that was a total success: Tuna Poke Bowls!
If you have never had a poke bowl, it is like a deconstructed sushi roll that combines all of the most delicious ingredients in sushi and throws them into a delicious bowl! Generally, these bowls are made with raw tuna which is delish, but because half of the people I am feeding at my house are under the age of 5 and will not be having any of that, I opted for canned Wild Selections® Solid White Albacore Tuna in Water instead and the result is so delicious and insanely easy. Plus, Wild Selections® not only feeds you and your family, but also gives back to the World Wildlife Fund with every Wild Selections® can you purchase. It is also the only full line of Marine Stewardship Council (MSC) certified sustainable seafood and the blue MSC eco-label tells you the fish in your can comes from well managed fisheries and healthy fish stocks!
So, are you ready to make some poke bowls? Let’s do it.
- 2 cans, Wild Selections® Solid White Albacore Tuna in Water
- 2 avocados, sliced
- 2-5 radishes, sliced
- 1 large carrot, shaved or sliced
- 1 large cucumber, sliced
- 2 green onions, sliced
- 1 large mango, cubed
- 1 c. red cabbage, finely chopped
- 3 c. cooked white rice
- Sriracha mayo
- 1 tbsp. nori & sesame rice seasoning (optional)
- Soy sauce (optional)
- Separate warm rice into 4 bowls. Season with salt, if desired.
- Top each bowl with tuna and desired vegetables.
- Finish bowls by sprinkling with rice seasoning, topping with mayo, or by adding soy sauce. Enjoy immediately. (Recipe makes approx. 4 large bowls.)
You are going to love this recipe! There are so many wonderful flavors and textures brought out by each of its ingredients and by using Wild Selections® tuna, it is SO easy. Plus, this recipe is a great way to celebrate Earth Day this weekend, with all of its wonderful ingredients coming straight out of the ground. Plus, Wild Selections® gives back to the oceans by donating 13 cents from every can sold—a total of $1 million by 2018—to World Wildlife Fund marine conservation and fishery improvement projects. Wild Selections is the only brand to “pay it forward” and act on its belief to take care of the oceans for the future, not just fishing sustainably in the present.
Can you believe all of those beautiful colors, too? My kids loved pointing them all out while they gobbled up these bowls. It’s just a win-win recipe and the dinnertime grouch won’t stand a chance when these are on the menu.
So, what are you making for dinner tonight? I’d love to hear!
