If you have been following the PLG blog for awhile, then you know that we are partial to popsicles. We’ve made them with pudding, we’ve made them with coconut milk, we’ve made them with coconut water, and we looooove to make them striped. Striped popsicles are so fun to look at and we love combining different flavors to make them extra special. So, today we are posting our third attempt at making striped popsicles, with this delicious batch of the fruit juice variety.
Here is what you need to make them:
Colorful Layered Fruit Juice Popsicles
(makes 6 popsicles)
Note: For the juices you can make your own or buy them pre-made. All of mine were Bolthouse Farms brand that you can generally find near the refrigerated fresh produce at any grocery store.
1 cup green juice
1 cup strawberry banana juice
1 cup mango juice
1/2 cup cream of coconut
1/2 cup coconut milk
Step 1: In a small bowl, mix together the coconut milk and cream of coconut until smooth and combined. Cover and place in the refrigerator.
Step 2: Pour a half-inch layer of the first juice in each mold. Place the mold in the freezer and let freeze.
Step 3: Repeat step 2 with another layer of juice or the coconut mixture. Return to the freezer and let freeze.
Step 4: Repeat step 3 with another layer of juice or the coconut mixture. Insert the popsicle sticks into the molds and return to the freezer and let freeze.
Step 5: Repeat the process of pouring in a layer of juice or the coconut mixture and letting it freeze until the molds are full and all layers are frozen.
Step 6: To remove the pops from the molds, run the molds under warm water until the pops slide out. Serve within 1 week of making.
There is just nothing better than opening the freezer on a hot summer day, only to find you have your own gourmet popsicles waiting for you in the flavors you love! Just think of the different combinations of juices and purees and creamy coconut that you could stripe together!? My mouth is watering already.
