This Sparkling Pineapple Mojito Mocktail is so refreshing and fun to make. The pineapple, mint, and lime combination is beyond delicious and tastes like summer in a glass. Keep scrolling for the recipe!

It hit above 90 degrees for the first time yesterday in NYC with about a million percent humidity and it was WILD. I felt like I was walking in a hot, swampy cloud all day and was pretty much covered in sweat before I even stepped out onto the street. New York City! So dreamy! As a result of this less-than-ideal heat/moisture combo that is coming for me this summer, I’ve decided that it’s time to start dwelling on only the magical parts of this season if I’m gonna survive it, and FAST.

For me, a big part of summer survival is food! I love getting everyone in the kitchen to make and eat snow cones, summer salads, bowls and bowls of watermelon, cones piled high with ice cream and lots more. So, in today’s post I’m sharing a couple of things I am currently loving that are elevating my summer in the kitchen with help from our friends at Snapfish! Snapfish is so much fun because it lets you create personalized gifts and keepsakes using your own photos and designs. With Snapfish you can make everything from photo books to blankets to awesome kitchen items like recipe books, aprons, and more! Making these projects is a piece of cake, all you have to do is upload your pictures or designs, and the results look like a million bucks, while being completely affordable!

For our projects we made a fun tropical cutting board and coaster set to bring some summer vibes into the kitchen, and we made a gorgeous beach towel, perfect for wet and wild days on the beach or picnics in the park. I can’t wait to show you everything along with the Sparkling Pineapple Mojito Mocktail we made to test it all out!  Let’s do this!

Let’s start with a peek at the cutting board we made! I purchased a gorgeous tropical print from a designer I love on Etsy, and added our last name to it using the summer intuitive design program on the Snapfish website. It’s so fun to have a personalized piece like this in the kitchen in exactly the style I wanted. (If you decide to make your own, use code FOODIE40 for 40% off your order right now!)

To compliment the cutting board, I also purchased this fun, coordinating fruit print from the same designer to make the coasters! These babies are going to be the perfect adorable home for icy glasses of fruity drinks all summer long! For me, the best part about making these is that possibilities are endless with Snapfish. You can make a design you love, use one that’s already made, or upload you favorite photos to create beautiful and personal items like these coasters! And you’re gonna need something delish to sip on once your coasters are finished so…on to the recipe!

Aren’t the cutting board and coasters so much fun!? They bring the perfect pop of summer to my kitchen and I love seeing that little fruit pattern pop out below my yummy mocktail!

Along with the coasters, I also had a blast making a beach towel with Snapfish! To make it, all I did was upload a design of one of my favorite quotes to make the perfect summer towel. This towel is beyond cute, it’s huge, and it’s soooo soft. I need 10 of them! Willa and I loved sitting on it on our roof, twirling and sipping our pineapple drinks!

Ready to make your summer even MORE fun with Snapfish? We can’t WAIT to see what you make! And be sure to use code FOODIE40 at checkout for 40% off your order!

Happy sipping and summering!
