If you follow this blog then you know how deeply we love Diet Coke® around here. In fact, I searched our site to see how many times the phrase “Diet Coke” came up in our posts and it said there were more that 48 instances! In comparison, I didn’t dare search how many times I mentioned my own husband (something else I deeply love), because truly, I couldn’t face the answer (insert monkey with eyes covered emoji here).
As a result of our affection, you can imagine how we felt as the truest original Diet Coke lovers when we learned about the delicious and bold Diet Coke with new added flavors — we flipped! I love everything about these new added flavors (Feisty Cherry, Zesty Blood Orange, Fresh Ginger Lime, and Twisted Mango) and the face lift on the new, sleek cans. (And don’t worry, fellow Diet Coke diehards, the original Diet Coke still has the same great taste!) I feel like the addition of these beauties into my life is similar to when I had my second child. I mean, just when I thought I didn’t have any more love to give after having my first child (or original Diet Coke), I met my second child (or the new Diet Coke® Twisted Mango) and I realized I had more love to give than I could possibly imagine.
So, to celebrate our Diet Coke cup running over, today we are sharing the perfect recipe to pair with one of our favorite new Diet Coke flavors, Diet Coke® Zesty Blood Orange! This recipe for Goat Cheese Crostini with Blood Orange Salsa combines so many amazing flavors and textures from the sweet orange and peach, to the tangy onion and pepper, to the creamy cheese and toasty bread. Pair that goodness with a cold and bubbly Diet Coke Zesty Blood Orange you’ll be busting out of your ordinary routine and entering flavor heaven. Here’s how to make it:
Goat Cheese Crostini with Blood Orange Salsa
Ingredients
- 2 Blood Oranges peeled and diced
- 2 peaches peeled, pitted and diced
- 2 tablespoons diced red bell pepper
- 2 tablespoons diced red onion
- 1 tablespoon fresh lime juice
- 1 tablespoon chopped fresh chives
- Salt and Pepper to taste
- 4 ounces goat cheese at room temperature
- 2 tablespoons milk
- 1 French Baquette, sliced
Directions:

Preheat oven to 400 degrees.

In a medium bowl, combine oranges, peaches, red pepper, red onion, lime juice and chives.

In a small bowl, whisk together goat cheese and milk.

Arrange bread slices in a single layer. Cook for 10 minutes or until lightly browned. Remove from oven and spread goat cheese on each bread slice.

Top bread and cheese with salsa and serve immediately.

Aren’t the colors of this salsa gorgeous? Plus, they are just bursting with fresh flavors that I could eat all day. When I was in Utah last week visiting family last week I made a huge bowl of this salsa, readied trays of the crostini, and set out a box of ice-cold Diet Coke Zesty Blood Orange for my family and let me tell you, that slow Saturday afternoon all of a sudden felt like a party. It was the best. So much deliciousness.
