Spiced Chocolate Chip Cookies

For the first time this year it was legitimately chilly this weekend and it is putting me in a major holiday mood. Isn’t it crazy how those first low temperatures can give you immediate feelings of cozy fires and Christmas trees and holiday baking? I love it so much. The holidays are always a time of major reflection and this year has been a wild one for our family with our move to NYC, making me filled to the brim with gratitude. As a result, there is going to be LOTS of baking for friends happening in our kitchen this year and one of my favorite ways to express love HAS to be through freshly baked cookies.

I have plenty of fancy cookie recipes with fun holiday flavors like mint or cranberry, but a simple chocolate chip cookie will always be my #1. However, I have the perfect tweak to the standard variety that I love for the holidays and that is perfect for holiday gifting. This recipe for Spiced Chocolate Chip Cookies has all of the ingredients for this perfect, familiar cookie, with a holiday twist brought to you by a little ginger, nutmeg, and cinnamon. It’s a simple addition but it makes a big impact and one bite of this flavor combination will give you plenty of holiday feelings. Plus, I use my favorite Bob’s Red Mill Organic All Purpose Baking Flour so I know this recipe is gonna shine since that flour is the highest quality you can get your hands on. So let’s get baking.

Spiced Chocolate Chip Cookies
1 cup butter or margarine, softened
1 1/2 cups packed brown sugar
1 teaspoon vanilla
1 egg
2 cups Bob’s Red Mill All-Purpose Organic Flour
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 package (12 oz) semisweet chocolate chips
1 cup chopped pecans

  1. Heat oven to 375°F. In large bowl, beat butter, brown sugar, vanilla and egg with electric mixer on medium speed, or mix with spoon. On low speed, beat in remaining ingredients except chocolate chips and pecans. Stir in chocolate chips and pecans.
  2. On an un-greased cookie sheet, drop dough by rounded teaspoonfuls about 1 inch apart.
  3. Bake 7 to 9 minutes or until light brown. Cool 1 to 2 minutes; remove from cookie sheet to cooling rack.

Can you imagine anything better than a delivery of warm, spiced chocolate chip cookies? Truly, there’s nothing better! You have to work this recipe into your holiday baking arsenal and they will be a hit every time. I love the mix of spices with the crunch of pecans and warm chocolate chips. These would also be great with a dark chocolate chip, too, if you’ve got mature palettes to feed.
