The other day I was pulling weeds in our little garden when I smelled the most delicious scent wafting through the air. I started following it like a puppy when I came across the most lovely little patch of mint! This little surprise must have been planted by our home’s previous owners and I was so lucky to have stumbled upon it! After finding it I knew I had to put this amazing scent and flavor to use and decided to whip up one of the most refreshing summer lemonade recipes I have ever had: Sparkling Watermelon Mint Lemonade!
This recipe combines some of the most delicious flavors of summer into one incredible mocktail: the sweetness of watermelon, the tartness of lemon, and the cool flavor of mint! Plus, this recipe is so simple to put together and would be a total show-stopper at your next summer get-together. Here’s how you make it:
Sparkling Watermelon Mint Lemonade
Ingredients:
2 lemons, quartered
1 cup fresh mint leaves
1/2 cup packed light-brown sugar
1/2 medium seedless watermelon (about 9 pounds), rind removed, flesh cut into chunks
2-3 cups ginger ale or sparkling water
Squeeze lemons into a large pitcher; add squeezed lemon quarters. Add mint and sugar; mash with a wooden spoon until mint is bruised and sugar is dissolved.
