Cookie Butter Pie with Biscoff Cookie Crust

What does cookie butter taste like?

If you aren’t familiar with cookie butter, it is a BRILLIANT concoction made from cookies that is pretty much the taste of Christmas in a jar. It is ground speculoos spice shortbread cookies (like Biscoff), that have the flavor of gingerbread, cinnamon, and caramel, whipped into the consistency of a peanut butter like spread. It is glorious and unique and so delicious.

What can I use cookie butter for?

I love cookie butter on apples, pretzels, waffles, my fingers, etc., but many of you have asked, how else do you eat it?

As a result, this creamy Cookie Butter pie was born, the taste of which nearly made my eyes roll back into my head. This sucker is BEYOND, and it is literally easy as pie to make. Yes, literally.

How to make Cookie Butter Pie

This pie comes together super easily with a basic crust made from Biscoff cookies and butter. Press the mixture into a pie pan and pre-bake it for a few minutes.

The pie filling is a mixture of whipping cream, cream cheese, and cookie butter, as well as powdered sugar and some salt. After pouring the mixture into the prepared crust, chill for a few hours, and that’s it!
