Poke Bowls with Tuna and Sriracha Mayo

I must admit that I am a bit of a dinnertime grouch. When it gets to be around 4 pm and I have to start the cycle of what’s-in-the-fridge-what-can-I-make-with-that-will-they-or-won’t-they-eat-it-how-many-times-a-week-is-acceptable-to-order-a-pizza I want to pull my hair out. Although I love to eat, I have never been one who finds joy in the process of making the food, the eating. Alllll the eating. However, since it is spring and summer is coming soon and there are so much more wonderful fresh produce to be found I am trying to turn over a new leaf, and create meals that are delicious and simple, and don’t turn me into a dinnertime monster. So, in case you are like me and are trying to avoid the dinnertime funk, I thought I would share one of the meals we tried recently that was a total success: Tuna Poke Bowls!

If you have never had a poke bowl, it is like a deconstructed sushi roll that combines all of the most delicious ingredients in sushi and throws them into a delicious bowl! Generally, these bowls are made with raw tuna which is delish, but because half of the people I am feeding at my house are under the age of 5 and will not be having any of that, I opted for canned Wild Selections® Solid White Albacore Tuna in Water instead and the result is so delicious and insanely easy.
