Mini Fruit Pizzas with Oat & Pecan Crusts

Doesn’t it feel like spring might, maybe, may be coming out there? The weather is doing that annoying thing where it’s 60 degrees one day and dumping snow the next, green sprouts are appearing in places, and the light! After 6pm! Yes. It definitely has to be coming.

For me, whenever I feel like we’re just on the cusp of spring, I start itching to purge my kitchen of all the sad, heavy, winterish foods I’ve been eating and brighten things up in the kitchen, and today’s recipe is a perfect example! These Mini Fruit Pizza’s with Oat and Pecan Crust are the perfect addition to any spring party, shower, or weekday afternoon. They are so easy to make and so outrageously delicious, not only because of the delectable (and beautiful) fresh fruit, but because of that cereal crust! 

Here is how you make them:

Fruit Pizzas with Oat and Pecan Crust

Prep Time: 20 minutes
Yield: 4 4.75 inch tarts

Ingredients
4 c. Honey Bunches of Oats Pecan & Maple Brown Sugar
2 tbsp. butter, softened
2 tbsp. light corn syrup
8 oz. cream cheese, softened
1 c. vanilla greek yogurt
1 tbsp. sugar, maple syrup, or preferred sweetener
2 c. sliced fruit

Instructions
1. Preheat oven to 350°F. In a food processor or storage bag, crush cereal until fine.
2. In a bowl, combine cereal, butter and corn syrup.
3. Press mixture evenly and firmly into tart pans. (Mine are 4.75 in.)
4. Bake for 5 minutes or until edges brown, cool completely.
5. Combine cream cheese, yogurt and sweetener, spread over crust.
6. Arrange fruit over cream cheese mixture.

Aren’t these fruit pizzas gorgeous? The creamy frosting, delicious fruit, and perfect mix of textures and flavor in the crust makes every bite outrageous. I love the idea of having a party where the crusts are made and guests can decorate their own with an assortment of fruit (the possibilities of fruit combinations, colors and flavors are endless!), and they are so decadent they will be a definite crowd pleaser!
